This blog post is a little different for me as it has nothing to do with investing. As many of you know my heritage is Greek and Welsh, St. Patty's Day was never a really big deal growing up. Luckily for my kids and I, my wife is half Irish and growing up in Sydney it was a big deal in her house. Every year from March 1st-17th my house is visited at night by a naughty Leprechaun named Silly McGilly. This little guy causes all sorts of mischief. As an example, last night he taped decorations to a ceiling fan and then hid a bunch of confetti on top of the blades. Much to my kids delight, when they woke up and turned the lights on, the confetti went flying everywhere. To be woken up by the laughter of a 5 and 7 year old is a great thing.
Seeing as it's St. Patrick's Day, instead of writing about investing I wanted to take a moment to share with you two of our favourite St. Patty's recipes.
Guinness Burgers
We first tried this recipe out 7 years ago for a party and they had rave reviews. They've been a St. Patty's tradition ever since. Even if you're not a Guinness fan (I'm not) these taste great and are easy to make. When we first saw the ingredients we weren't sure but somehow they all work together to make a very tasty and moist burger. The key to these is to not handle the meat too much and make them into fairly loose patty's.
You'll need:
1 1/4lbs ground beef
1 dash pepper
1/2 tsp Tabasco Sauce
1 clove garlic, crushed
1/4 C chili sauce - we use a sweet thai chili sauce
1/2 oz of packaged Knorr French Onion Soup
1/2 C of Guinness. 1.5oz applied to the burger meat
Mix all the above ingredients and lightly form a burger patty. In a 400F over cook for 10mins then baste with the remainder of the guinness and cook for another 10-15mins. You can also cook them on the BBQ and baste accordingly.
For dessert you can try out:
Bailey's Cupcakes
These are truly decadent and if you're anything like me, mixing Bailey's and Chocolate together is a match made in heaven.
You'll need to follow the instructions for a chocolate cake mix and make the cupcakes as is, the key is the filling and icing.
for the filling:
1.5 C whipping cream
0.5 C Bailey
whip the cream and the Bailey's until it thickens. You'll then need to remove the center of the cupcake. Fill the centre with the mixture and then cut the top of the core and "close" the cupcake back up.
Icing:
0.5 C softened butter
3C Icing Sugar
1/3 C Bailey's
Mix all the ingredients. Top cupcake with as much icing as your heart desires.
